Peri Peri Bhutta
Made with Peri Peri Butter Dip

Peri Peri Bhutta

Monsoon street corn, at home.

15 minServes 2Easy

Ingredients 2 servings

Method

Tap a step when it's done.

  1. Take the jar out of the fridge 15 minutes before you start, so the butter dip spreads easily.

  2. 8 to 10 min

Roast the cobs straight over a medium gas flame, turning every minute with tongs, until charred in patches all over. No flame? Boil for 5 minutes, then char in a very hot, dry pan.

  3. While the corn is still hot, rub the butter dip all over each cob so it melts into every kernel.

  4. Dip a lime wedge in chaat masala and rub it over the corn, the way the bhutta-wala does.

  5. Scatter over the coriander and eat straight away.

Chef's note

Char first, butter dip last. On a raw cob it just burns. On a hot, charred cob it melts straight into the grooves.

Method

  1. Whisk the curd, ginger-garlic paste, chilli powder, garam masala, salt and oil into a thick marinade.

  2. 30 min

Fold in the paneer, capsicum and onion until everything is coated. Cover and rest in the fridge.

  3. Thread onto skewers, alternating paneer and vegetables.

  4. 8 to 10 min

Cook on a hot, greased tawa or grill pan over medium-high heat, turning every 2 minutes, until charred at the edges. Oven: 220°C for 12 to 15 minutes, turning once.

  5. Take the skewers off the heat and brush them straight away with the butter dip so it melts into the char.

  6. Squeeze over the lime and serve with mint chutney and sliced onions.

Chef's note

Keep the butter dip out of the marinade. Curd dulls the spices. Brushed on at the end, they stay loud.

Method

Tap a step when it's done.

  1. Heat the oil in a large, heavy pot over medium-high heat with 3 kernels in it. When they pop, add the rest, shake to coat and cover.

  2. 3 min

Shake the pot every few seconds. When the popping slows to 2 or 3 seconds between pops, take it off the heat.

  3. Melt the butter dip in a small pan.

  4. Drizzle over half the butter dip and toss, then the rest and toss again. Finish with the salt and sugar.

Chef's note

Drizzle in two rounds. One big pour makes soggy clumps. Two small ones coat everything.

Basil & Parmesan Aloo Paratha

Sunday breakfast, with an Italian accent.

Method

Tap a step when it's done.

  1. 15 min

Knead the atta and water into a soft dough. Cover and let it rest.

  2. Mash the potatoes until completely smooth, because lumps tear the paratha. Mix in the chilli, coriander, amchur and salt.

  3. Divide the dough into 4 balls. Roll each into a 10 cm disc, put a quarter of the filling in the centre, pull the edges up and pinch closed.

  4. Dust with atta and roll gently into an 18 cm circle.

  5. 2 to 3 min each

Cook on a hot tawa over medium heat, about a minute a side until spotted, then flip again and press with a spatula until golden.

  6. Off the heat, top each hot paratha with 2 tsp of the butter dip and let it melt in. Serve with curd.

Chef's note

The butter dip goes on top, never on the tawa. Basil turns bitter over high heat, so let the paratha's own heat do the melting.

Method

Tap a step when it's done.

  1. Bring 2 litres of water to a rolling boil and add the salt. It should taste like the sea.

  2. 8 to 9 min

Cook the spaghetti 1 minute less than the packet says. Before draining, scoop out a cup of the starchy pasta water.

  3. Put the empty pot back on the lowest heat. Add the butter dip and 4 tbsp of pasta water and swirl until it turns creamy.

  4. 1 min

Add the spaghetti and parmesan and toss hard with tongs, adding splashes of pasta water until every strand is glossy.

  5. Take off the heat, fold in the tomatoes, crack over some pepper and serve straight away.

Chef's note

Pasta water is the secret. Its starch turns the melted butter dip into a silky sauce that clings to the spaghetti instead of pooling at the bottom.

Truffle Mushroom Risotto

Restaurant risotto, in your own kitchen.

Ingredients 2 servings

Method

Tap a step when it's done.

  1. Keep the stock hot in a small pan on the back burner.

  2. 5 min

Heat the olive oil in a wide pan and fry the mushrooms on high heat until golden. Season and set aside.

  3. 3 min

Lower the heat and soften the onion without letting it colour. Add the rice and stir for a minute or two, until the edges look glassy.

  4. Pour in the wine and stir until it has been absorbed.

  5. 18 min

Add the stock one ladle at a time, stirring often, waiting until each ladle is almost absorbed before adding the next.

  6. When the rice is tender with a slight bite, stir the mushrooms back in and take the pan off the heat.

  7. 1 min

Beat in the cold butter dip and the parmesan hard for 30 seconds. Rest for a minute, then serve on warm plates.

Chef's note

Italians call that last step mantecatura. Cold butter beaten in off the heat makes the risotto creamy and keeps the truffle aroma from cooking away.

Method

Tap a step when it's done.

  1. Heat the oven to 200°C, or an air fryer to 180°C.

  2. Mash the softened butter dip with the grated garlic.

  3. Cut the baguette into 2 cm slices and spread the butter dip right to the edges of each one.

  4. Top with the mozzarella and parmesan.

  5. 8 to 10 min

Bake until the edges are crisp and the cheese is bubbling. Air fryer: 5 to 6 minutes.

  6. Serve hot, straight from the tray.

Chef's note

Spread to the very edges. That is where the crunch is, and the butter is what turns them golden.

Ingredients 2 servings

Method

Tap a step when it's done.

  1. Toast the bread and spread a little of the butter dip on each slice while it is hot.

  2. Whisk the eggs, milk and a pinch of salt until no streaks remain.

  3. Melt half the remaining butter dip in a non-stick pan over low heat, then pour in the eggs.

  4. 3 to 4 min

Stir slowly with a spatula, pushing from the edges to the centre. If they set too fast, lift the pan off the heat for a few seconds.

  5. When the eggs are just set but still glossy, turn off the heat and stir in the rest of the butter dip.

  6. Pile onto the toast and finish with chives and black pepper.

Chef's note

Low heat and patience. Take the eggs off when they look slightly underdone. They keep cooking on the plate.

Truffle Parmesan Fries

Ingredients 2 servings

Tap to tick off what you have.

Method

Tap a step when it's done.

  1. 15 to 18 min

Air fry at 200°C, shaking the basket halfway, or bake at 220°C for 20 to 25 minutes, until deep golden.

  2. Meanwhile, melt the butter dip gently in a small pan, or in the microwave for 20 seconds. Melted, not sizzling.

  3. Tip the hot fries into a large bowl, pour the butter dip over and toss.

  4. Add the parmesan, parsley and a pinch of salt, toss again and serve straight away.

Chef's note

Toss in a big bowl, not on the tray. Room to move means every single fry gets coated.
